No Added Sugar

A bad beginning 

With school holidays about to begin I pulled out the cook books in an attempt to fill the cookie jar. The first recipe to jump out was Anzac biscuits. 

When they were cooked I wondered why they looked 'wrong'. I tasted one and it turns out ... I forgot to add the sugar. 

Moral of the blog. Always taste the mixture before cooking it. Such a waste of time and ingredients. With no coconut left to make another batch I turned to an old favorite Choc-chip cookies.

Popcorn creation

Who would have though such a simple recipe could become such a disaster? Not me. I learnt my lesson and felt the need to share it.

The site was called real simple, this gave me a false sense of security....


It all went well until the marshmallow melted. I used mostly white marshmallows but the three pink ones that I missed must have been packed full of food colouring. I say this because the end result is pink. As they melted I watched the marshmallows become stringy... the mixture became smooth when it was completely melted. Don't be fooled! As soon as I added it to the popcorn it became stringy again. 


Starting with a wooden spoon to mix I soon thought, "I'll use my hands" WOW... I could not have been more stupid. My fingers soon became popcorn magnets. I would get the popcorn off one hand only to find it stuck on the other. The marshmallow had begun acting like superglue. Super stringy superglue! After discovering my mistake I tried using utensils. These all ended up stuck in the mixture. There are no photos of this disaster. Next time I am foolish enough to try this recipe I will be sure to arm my son with a camera. Getting the mixture into the mould is not as easy as you might think. Baking paper was my friend during the task. 
The end result tastes a bit like pre-packed coloured popcorn. I am off to a party of over 30 children, the ultimate test.
